Father’s day to me is more than just taking time to recognize your dad. — Mine by the way is freaking awesome. He is one of the smartest, most fun people you will ever meet – if you are lucky enough to get the chance.
Father’s day is also about recognizing your partner in crime for child rearing. Whether he is the biological, adopted or step-father. It is about taking the time to notice and appreciate their effort and assistance.
Lately my husband has gone above and beyond. Between the kid, the dog and the house he has been superman. Lately I have been consumed with my new job and my health; leaving me little time or energy to help put.
Even though in today’s day and age it is ‘expected’ for a man to do all these things, I still appreciate that after a long days work that he does his share and picks up my slack without complaint.
This year I wanted to do something extra special. So going with our daughter’s idea, we got Nick a smoker. He has been eyeing up our neighbor’s, especially after he tasted their pork shoulder. Mmmm…..
I opted to get him an electric smoker rather than gas since online they appear to yield similar results and electric is easier.
Hickory chips are the most versatile and became our starter chips.
Bobby Flay had a dry rub recipe online which was easy to whip up!
Into the smoker they go for a 3-2-1 smoke. 3 hours with the rub. 2 hours loosely wrapped in tinfoil with Apple juice. 1 hour unwrapped with barbecue sauce.
After 6 hours of waiting the ribs are ready! They look and smell delicious after they come out of the smoker.
These ribs fell right off the bone! Yum!! Tender juicy goodness. ❤❤❤
